These vegan buckwheat pancakes are full of nutrients and they are very filling but light at the same time. This is due to the 2 ingredients: buckwheat flour and psyllium husk.

I grew up eating buckwheat often at my house, but I’ll admit, I didn’t really like it back then. However, all that has changed now, as I’ve found a great way to enjoy it—blended perfectly into these easy and delicious pancakes.

Now, I know some of you might not have been big fans of buckwheat either, but trust me, when you try it in these pancakes, you’ll be pleasantly surprised. It’s like rediscovering an old friend and falling in love with them all over again!

What is buckwheat flour?

Buckwheat flour is a gluten-free flour made from ground buckwheat seed, also known as buckwheat groats. Buckwheat flour has a hearty flavour.

It is high in fibre and therefore lower in carbs than other regular flour. The colour of buckwheat flour varies depending on the country and brand you use, from light white to grey pale.

What is psyllium husk?

Psyllium husks are a form of fibre that comes from the husks of psyllium seeds of the Asian Plantago plant genus. The husks can be ground into a powder and provide a rich source of soluble fibre.

Storing and freezing

To keep these cooked ‎vegan buckwheat pancakes fresh, store them in an airtight container. Either plastic. Just make sure that the container is completely dry and sealed before you use it and that the pancakes are cooled so they won’t create condensation and go soggy.

Can you freeze the pancakes?

Yes, you can. Just take out the trusted baking parchment for layering the pancakes. But this time, the top and the bottom layer are mandatory.

How to reheat leftovers

The best way to reheat leftover pancakes is with a toaster. The toaster will brown them, and add that extra flavour.

How to make Vegan buckwheat pancakes?

Prepare Ingredients:

Measure out the buckwheat flour, flax seeds, and psyllium husk.
Grind the flax seeds into a fine powder using a blender or spice grinder.
Blend the Batter:

In a blender, combine the buckwheat flour, ground flax seeds, psyllium husk, water, and a pinch of salt and pepper.
Blend the mixture until you have a smooth batter. If the batter is too thick, you can add a little more water to reach the desired consistency.
Heat the Frying Pan:

Heat a non-stick frying pan over medium heat.
If you’re using oil, you can add a small amount to the pan and spread it evenly.
Cook the Pancakes:

Pour the batter onto the heated pan. You can make one large pancake or divide the batter to make two medium-sized pancakes.
Use the back of a spoon to spread the batter into a circular shape.
Cover and Cook:

Place a lid or cover over the pan. This helps to create steam and cook the pancakes evenly.
Check for Doneness:

After a few minutes, gently lift the edge of the pancake to see if it’s cooked through. The edges should be slightly crispy and the center should be set.
Flip and Finish Cooking:

Once the bottom is cooked and holds its shape, carefully flip the pancake over using a spatula.
Cook the other side for an additional few minutes until it’s golden brown and cooked through.
Serve and Enjoy:

Slide the cooked pancake onto a plate.
Now, it’s time to get creative with your toppings! You can add sautéed vegetables, vegan cheese, avocado slices, vegan sour cream, or any other toppings you like.

Vegan buckwheat pancake ingredients

buckwheat flour – I have not substituted this with any other flour as I love the taste of buckwheat.

flax seeds – it acts as a binder. I haven’t done it but chia seeds might work here too.

psyllium husk – another binder. It absorbs a good bit of water. The closest replacement you can get for psyllium husk powder is flaxseed so just add more if you can’t find it.

olive oil

salt and pepper

Ingredients
  

  • ¼ cup buckwheat flour
  • 1 tbsp flax seeds
  • 2 tbsp psyllium husk
  • ¾ cup water
  • pinch salt&pepper

Instructions
 

  • Throw everything in a blender and blitz!
  • Heat your frying pan on a medium heat and add oil if using.
  • You can either make one big pancake or make 2 medium ones.
  • Put cover on and fry it for few minutes.
  • Lift the pancake to see if it is cooked through.
  • Flip over and cook for additional few minutes.
  • Get your topping game on and ENJOY!
