A simple recipe for protein pancakes

Protein pancakes can be a healthy and well-balanced breakfast idea for a healthy lifestyle.  This recipe will help boost your energy and won’t leave you feeling sluggish afterward. All are made in a blender with no refined grains, no refined sugar, and loads of healthy proteins! Made from basic ingredients you probably already have, these pancakes are a hearty blend of oats, chocolate protein powder, and a few pantry staples. The batter, a mix of plant milk, water, flax seeds, and raw cacao powder, transforms into no-nonsense, down-to-earth pancakes. Top them with a hazelnut butter sauce, and you’ve got a breakfast that’s simple yet scrumptious.

Why you will love this protein pancakes recipe:

Skip the extravagant ingredients and complicated steps. These pancakes are about simplicity and flavor. They’re hearty, they’re filling, and they get the job done without any unnecessary flair. These pancakes are:

Tasty

Simple

Vegan

Protein-packed

Nutritious

Possible supplies needed:

Blender

Non-stick frying pan

Ingredients needed:

Oats – Hearty texture and whole-grain goodness to the pancakes.

Chocolate Protein Powder– Boosts protein content, providing a satisfying and nourishing element.
See below for recommendations.

Plant Milk – I love using oat milk here and it contributes to a smooth consistency and adds a mild flavor.

Substitute: Almond milk, soy milk, oat milk, or any non-dairy alternative.
Water:

Water – Balances batter thickness, ensuring pancakes aren’t too dense.

Flax Seeds– Acts as an egg substitute, providing binding properties.

Substitute: Chia seeds as an alternative egg substitute.

Raw Cacao Powder– Adds a rich, chocolate flavor to the pancakes as well as loads of nutrition!
Vegan Substitute: Regular cocoa powder or carob powder.

Hazelnut Butter- Creates a decadent and flavorful nut butter sauce.

Substitute: Almond butter, peanut butter, or any plant-based nut or seed butter.

Maple Syrup (for Nut Butter Sauce)- Sweetens the nut butter sauce, adding a hint of natural sweetness.

Substitute: Agave syrup or any other vegan sweetener of choice.

Expert tips:

  • For fluffier pancakes, let the batter chill for a bit before cooking. Adjust thickness by adding more plant milk if needed.
  • Adjust the milk: Different protein types will have different absorbency levels, so adjust the amount of milk to a regular pancake batter consistency.
  • Don’t over-mix the batter: the pancakes can become dense if the batter is overworked.

Try to mix things up!

Switch up your protein pancakes with some fun additions that play well with the chocolatey goodness:

Fruity Pop: Toss in a handful of blueberries or sliced strawberries into the batter. It’s like a little fruity surprise in every bite.

Nutty Crunch: Sprinkle some extra crushed nuts on top. Adds a nice crunch and goes perfectly with the hazelnut butter sauce.

Coconut Bliss: Change things up with some shredded coconut. It’s like a mini tropical vacation for your taste buds. Coconut and chocolate go so well together!

Choco Overload: NO if you are a chocoholic add 1/2 tsp of cocoa powder to the sauce ….Because why not?

Mix these up or try your own combos. The beauty of these protein pancakes is how easy it is to make them your own tasty creation.

Recommendation

I have to admit that the protein powder I used made a big difference here in an intense chocolate flavor so you can use any chocolate protein you have on hand. Additionally, you can add more cacao powder to intensify the chocolate flavor. In this case, I used raw cacao powder which has so many health benefits.

The protein powder I used :

5 benefits of raw cacao powder

1.  40 Times the Antioxidants of Blueberries

Raw Organic Cacao has over 40 times the antioxidants of blueberries.  Yes, 40 times!  It has an amazing ORAC score of 98,000 per 100g, vs blueberries at a mere 2,400.  ORAC scores measure the ability of antioxidants to absorb free radicals (that come from pollution and toxins in our environment), which cause cell and tissue damage and can lead to diseases such as cancer.

2.  Highest Plant-Based Source of Iron

On a plant-based/vegan diet and looking for iron?  The search is over!  Cacao is the highest plant-based source of iron known to man, at a whopping 7.3mg per 100g.  This compares to beef and lamb at 2.5mg, and spinach at 3.6mg.  Note the iron in cacao is non-heme (as is all plant-based iron), so to get the maximum benefits you’ll want to combine it with some vitamin C. Think oranges, kiwifruit, superfoods like gubinge or camu camu (which have 40x more vitamin C than oranges).

3.  Full of Magnesium for a Healthy Heart & Brain

Raw Organic Cacao is also one of the highest plant-based sources of magnesium, the most deficient mineral in the Western world.  Magnesium is important for a healthy heart and helps turn glucose into energy enabling your brain to work with laser-sharp clarity and focus.

4.  More Calcium Than Cow’s Milk

Raw Organic Cacao has more calcium than cow’s milk would you believe, at 160mg per 100g vs only 125mg per 100ml of milk?

5.  A Natural Mood Elevator and Anti-Depressant

Cacao is a great source of four scientifically proven bliss chemicals – serotonin, tryptophan, tyrosine, and phenylethylamine.  These neurotransmitters are associated with cozy feelings of well-being, and happiness, and can even alleviate depression.
