Celeriac is an ugly duckling of a vegetable that is also known as celery root or turnip-rooted celery, or in some parts, as knob celery. As it is late autumn I begin to see celeriac everywhere! This veggie is available year-round but is at its best from September to April. Celery like apples is full of vitamins and minerals necessary for the proper functioning of the body – another reason to try this recipe 😉👌.
When I was a kid, celeriac salad used to be a standard side salad accompanied by meat in my house. If you go down to the fruit and vegetable market in my town you will find this in a plastic box ready-made. Ingredients
- 1 medium celeriac around 300 g
- 1 medium apple
- 3-4 tblsp vegan mayonaise
- 4 tblsp vegan yogurt
- salt & pepper
- 2 tblsp chopped walnuts
Instructions
- Wash the celeriac and apple and grate them in a food processor or use a veggie grater.
- Add lemon juice first as it will stop the celeriac and apple turn brown!
- Add the rest of the ingredients and mix well.
- Leave it in a fridge for at least 30 min before serving.
