How to store this Immune boosting vegan vegetable soup

After allowing the soup to cool down transfer the soup to an airtight container. Glass or plastic containers with tight-fitting lids work well. Leave about an inch of space at the top of the container to allow for expansion as the soup freezes.

Store the container in the refrigerator for up to 3-4 days or in the freezer for up to 2-3 months.

When ready to eat, thaw frozen soup in the refrigerator overnight, and then reheat it on the stovetop or in the microwave until it reaches a safe temperature of 165°F (74°C).

Ingredients
  

  • 1 rib celery
  • 1 large carrot
  • 1 tbl coconut oil (if using)
  • 2 medium potatoes
  • 4 cups broccoli
  • 1 cup peas
  • 1 cup spinach
  • 1 cup kale
  • 1 tbls misso paste
  • 2 bay leaves
  • 5 cups vegetable broth
  • ½ tsp salt
  • ½ tsp pepper
  • 4 tbls parsley
  • 4 tbls dill

cashew cream

  • ½ cup cashews soaked
  • ¼ cup water
  • 1 tsp lemon juice

Instructions
 

  • Prepare all your vegetables by chopping them.
  • Add coconut oil to the pan if using and fry the base of the soup whih is onion, carrot and celery till translucent.
  • Add the rest of the ingredient without the spinach. Few minutes before the veggies are cooked add your kale.
  • Cook for another just few minutes, till veggies are tender but NOT overcooked ( nothing worse in a soup than overcooked brocoli ).
  • Transfer the soup to a blender and blend with fresh spianch ( the heat of the soup will wilththe greans slightly ).
  • mix in the fresh herbs: parsley and dill
  • put all the ingredients to a blender and blitz till smooth consistecy.
  • Serve yourslef a one huge bowl of this ! ( or 2 bowls)
  • Drizzle with beautiful cashew cream and sprinkle fresh herbs
