I absolutely love a good soup. There is not one week in our house that I don’t put some kind of soup recipe o my meal plan. I feel that there is something comforting in a mug of hot delicious soup when you just want to curl up on the couch and seek comfort. This vegan vegetable soup recipe takes no more than 30 mins to make and couldn’t be tastier! This immune-boosting vegetable soup recipe is jam-packed with plant-powerhouse veggies

  • broccoli,
  • peas,
  • carrots,
  • celery,
  • onions,
  • potatoes,
  • and antioxidant herbs that I love.

Its soothing broth is light, creamy, and flavorful, a fantastic recipe when you are feeling under the weather or any day of the week really. I always make a huge batch of soup and freeze the leftovers to grab and reheat whenever I feel like having something delicious and fast on those days when I am short on time. Above all the addition of cashew cream makes it just that much more special. 🙌

Like I said before this dish is easy and fast to do so there is no excuse for buying a packet of ready-made soups in the store! 😉✌.

immune boosting ingredients:

celery

  • celery contains flavonoids called luteolin which are very powerful phytonutrients with antioxidant (cancer-fighting) properties.
  • celery contains a plant compound called apigenin, which plays a role in traditional Chinese medicine as an anti-inflammatory, antibacterial, antiviral, and antioxidant agent.
  • pectin-based polysaccharides in celery, including a compound known as apiuman, have been shown to decrease instances of stomach ulcers, improve the lining of the stomach, and modulate stomach secretions in animal studies.

carrots

  • potassium in carrots can help keep your blood pressure at a healthy level.
  • the vitamin C in carrots helps your body build antibodies that defend your immune system.
  • high fiber content can help you keep your regular bowel motions.
  • carrots contain vitamin K and small amounts of calcium and phosphorus. All of these contribute to bone health and may help prevent osteoporosis.

broccoli

  • one cup of broccoli provides as much vitamin C as an orange.
  • broccoli contains a high amount of potassium, which helps maintain a healthy nervous system and optimal brain function.
  • contains high levels of both calcium and vitamin K, both of which are important for bone health.

Broccoli is a nutrient-packed powerhouse

pea

  • They’re Filling and an Excellent Source of Protein! There is 5g of protein per 100 grams of peas.
  • The high fiber content present in pods helps in maintaining good digestive health
  • Peas are rich in vitamin C, which makes them one of the best immunity-building foods.

spinach

  • similar to broccoli, spinach is healthiest when it’s cooked as little as possible so that it retains its nutrients.
  • 100 g of spinach contains over four times the recommended daily intake of vitamin K!
  • spinach contains beta carotene, zeaxanthin, lutein, and chlorophyll – all of which are responsible for improving your eyesight and boosting your immune system

kale

  • kale contains four times the vitamin C content and twice the selenium content of spinach, as well as nutrients like vitamin E and beta-carotene. All of them are important for supporting a healthy immune system
  • is rich in substances such as sulforaphane and indol-3-carbonylStudies show that it can support your body in cancer prevention.
  • kale is high in fiber and water, both of which help prevent constipation and promote regularity and a healthy digestive tract.

miso

  • miso is a source of copper, manganese, vitamin K, protein, and zinc.
💡 Miso is a paste created through the fermentation of soybeans and one or more grains!
  • the fermentation process means that miso is rich in enzymes. Fermentation enhances the number of beneficial bacteria in the food

parsley

  • the flavonoids in parsley—especially luteolin—have been shown to function as antioxidants that combine with highly reactive oxygen-containing molecules (called oxygen radicals) and help prevent oxygen-based damage to cells – isn’t that amazing?!
  • parsley is an excellent source of  Vitamin C and a good source of vitamin A< (notably through its concentration of the pro-vitamin A carotenoid, beta-carotene).
  • parsley is a good source of folic acid, one of the most important B vitamins.

💡 Parsley is the world’s most popular herb. It derives its name from the Greek word meaning “rock celery” (parsley is a relative to celery). It is a biennial plant that will return to the garden year after year once it is established.

dill

  • dill is packed with flavonoids, which have been shown to help reduce the risk of heart disease and stroke.
  • this herb is a good source of Vitamin A, Vitamin C , Calcium and Iron

💡 this is a unique plant in that both its leaves and seeds are used as a seasoning

Looking at all the above benefits there is no doubt about the immune-boosting properties of this vegan vegetable soup. So go ahead...MAKE IT and rip the benefits! Pair this soup with my chickpea and tofu wrap and you just made yourself a power lunch 🙌😉

Immunity best friend 😉

How to store this soup

After allowing the soup to cool down transfer the soup to an airtight container. Glass or plastic containers with tight-fitting lids work well. Leave about an inch of space at the top of the container to allow for expansion as the soup freezes.

Store the container in the refrigerator for up to 3-4 days or in the freezer for up to 2-3 months.

When ready to eat, thaw frozen soup in the refrigerator overnight, and then reheat it on the stovetop or in the microwave until it reaches a safe temperature of 165°F (74°C).
