Yogurt: Add a nice big dollop of Greek yogurt for a creamy and tangy contrast.
Nut butter: Spread some almond butter or peanut butter on top of your pancakes for a nutty and protein-packed topping.
Chocolate chips: Add some chocolate chips to your pancake batter before cooking or sprinkle them on top for a sweet and indulgent topping.
Savory toppings: As those pancakes have sweet potato in them why not try some savory twist? Top your pancakes with some avocado, and sliced cherry tomatoes.
Extra tips
Make your own oat flour: Instead of buying oat flour, you can easily make your own by grinding rolled oats in a food processor or blender until they form a fine powder.
Add some texture: For an extra crunchy and nutty texture, you can add some chopped nuts or seeds to the batter before cooking. Try pecans or walnuts, would match perfectly with sweet potato, as well as pumpkin seeds!
Mix up the spices: While the recipe calls for a pinch of cinnamon, you can also experiment with other warming spices like ginger, nutmeg, or cardamom.
Make a big batch: These sweet potato oat flour pancakes freeze well, so you can make a big batch and freeze them for later. Simply let them cool down completely, then store them in a freezer for up to 3 months. To reheat, simply pop them in the toaster or microwave.
Storage and reheating
Storage:
Once the sweet potato pancakes are cooked, allow them to cool down to room temperature. You can then stack them with a sheet of parchment paper in between each pancake to prevent sticking. Store them in an airtight container or resealable plastic bag and refrigerate for up to 4 days.
Reheating:
To reheat the sweet potato pancakes you can use a toaster to a frying pan. Simply place the pancakes in the toaster and toast until they are heated through and crispy. If using the frying pan reheat them on a low to medium till nice, crispy, and heated through.
