Although the original recipe is unknown to anyone, it is worth trying the homemade cinnamon rolls, which are no less tasty! Fluffy yeast dough, lots of cinnamon filling, and of course cream cheese topping.

Ingredients you need to make this vegan cinnamon roll for one:

Dough:

Plain flour – I used white spelt flour but you can substitute it with plain unbleached flour.

Baking powder – the rising agent.

Plant milk – My favorite is oat milk but of course, you can substitute with whatever milk you have on hand.
Pinch of salt – it’s needed to enhance and balance flavors.

Filling:

Almond butter – This recipe uses almond butter however you can substitute this with any other butter you like. Just keep in mind that it will be mixed with cinnamon. That’s why try to pick a nut butter that will enhance the flour of cinnamon not cover it!
Coconut oil – I don’t mind the flavour of coconut oil here but I made them before with vegan butter too.

Coconut sugar – If you don’t have coconut sugar just add any sugar you have on hand. I like coconut sugar for those extra nutritional properties. If I can eat a dessert with added nutritional value … ALL BETTER!

Cinnamon – You can commit if you don’t like the flavor of cinnamon

Glaze:

Icing sugar (maple syrup can be a great alternative)

Plant milk – again it is your choice.

Tahini – it is used for the glaze. I love tahini but if you don’t you can omit it.

Instructions:

– Preheat your oven to 180°C (about 350°F).
– Mix the dough ingredients until they come together in a smooth dough.
– In a separate bowl, combine the filling ingredients. If the coconut oil is liquid, let it cool a bit.
– Roll out the dough into a rectangular shape.
– Spread the filling over the dough, then roll it up gently.
– Grease a small ramekin or baking dish.
– If the rolled dough fits, place it in the ramekin. If not, slice the roll into smaller cinnamon rolls and arrange them.
– Bake for around 10 minutes, until the top is golden.
– While it bakes, whisk together the glaze ingredients in a small bowl.
– After baking, let your cinnamon roll cool a bit before generously drizzling the glaze on top.

EXPERT TIPS:

  • Don’t Overmix the Dough: When mixing the dough, go for just until everything comes together. Overmixing can make the dough tough, and we want this cinnamon roll to be soft and fluffy.
  • Room Temperature Ingredients: Using room-temperature plant milk and coconut oil for the filling ensures a smoother and more even mixture and it would be easier to mix everything together fast.
  • Adjust Sweetness: Taste the filling before spreading it on the dough. If you like it sweeter, feel free to add a bit more sugar or a drizzle of maple syrup.
  • Be Mindful of the Roll Size: When rolling out the dough, try to make it evenly thick. This helps ensure all parts of your cinnamon roll bake at the same rate. However, don’t let perfection stop you from rolling this cinnamon rollout!
  • Proper Greasing: Grease your ramekin or baking dish well to prevent sticking. You can use a bit of coconut oil or a non-stick cooking spray.
  • Watch the Baking Time: Keep an eye on your cinnamon roll while it’s in the oven. Baking times can vary slightly, so take it out when the top is nicely golden. I have overkooed it before and it was definitely not sift and fluffy 😉.

SUGGESTIONS:

  • Experiment with Glaze: The glaze can be tailored to your taste. If you like it thicker, add more icing sugar. For a creamier texture, increase the amount of plant milk. I like to add a tiny bit of lime zest sometimes for a flavor twist.
  • Customize Your Fillings: Get creative with the filling. Add crushed nuts, raisins, chocolate chips, or even a little bit og grated orange zest will give you an extra flavor.
  • Enjoy Warm: Cinnamon rolls are at their best when warm. If you’re not eating it right away, a quick reheat in the microwave or a few minutes in the oven can bring back that fresh-from-the-oven feel.

Ingredients
  

dough

  • 60 grams plain flour
  • ½ tsp baking powder
  • 3 tblsp plant milk
  • pinch of salt

filling

  • 1 tblsp almond butter
  • 1 tsp coconut oil
  • 1 tsp coconut sugar
  • ¼ tsp cinamon

glaze

Instructions
 

  • Preheat your oven to 180°C.
  • Mix the dough ingredient and form a nice smooth dough.
  • In a separate bowl mix the filling ingredients. If you are metling coconut oil let it coll a bit.
  • roll out the dough into a long rectangle. Don't need to be to exact wih this. Just have fun!
  • Spread the filling on the dough and roll it up.
  • Greesse your ramekin.
  • If you roll it out into a thin rectangle you can just put it into an oiled ramekin. Mine was a bit wide so I cut it into smaller cinnamon rolls 😁
  • Bake your cinnamon roll for about 10 min. You want nice a golden top.
  • In a meantime in a small bowl mix the glase ingredients.
  • When your bun is cooked let it cool slightly and than pour your glaze on top.
  • Now go and ENJOY!

      You could try to do it in a 1:1 ratio but remember that the leavening effects of baking powder will not be as distinct as those of yeast.

    Oh, this was the perfect recipe! I can’t tell you how often I crave a cinnamon roll but don’t want to go through the effort of making a huge batch and finding something that’s eggless as well. These totally hit the spot without all the effort and I’m happy to not have 10 rolls leftover now either because I don’t need to eat these every day!
