This nutty apple pie with the walnut crust is delicious! A tender flaky nutty crust filled with sweet juicy cinnamon apples all topped off with a delicious nutty crumble. This is the perfect apple pie to serve any time of the day!

There is something cozy and warming bout apples under a little cushion of nuts. The weather outside is still pretty cold. On those weekend evenings when I can wind down by the fire I truly appreciate a slice of this tasty cake! And there is something about the combination of apples and walnuts that makes this crumble cake the perfect combination.

This is a very quick apple pie that I recommend to everyone. Even people who bake and cook less often can cope with it. It’s delicious!

The base of a perfect apple pie or apple crumbles starts with choosing the right apples. You want to pick an apple that is crisp and slightly tart but will hold its shape while baking.

When baking apple pie, I recommend using a Granny Smith apple or Gala as I’ve used in this apple crumb pie recipe.

While you certainly can use any apple, some apples have a softer texture or are less crisp meaning your pie could become mushy or the apples won’t hold their shape.

Why this recipe works:

Nutrient-Rich Crust

The combination of walnuts, oats, almonds, and dates in the crust provides a healthy dose of essential nutrients, including omega-3 fatty acids, fiber, and various vitamins and minerals.

Natural Sweetener

The use of dates and xylitol as sweeteners adds a natural and low-calorie sweetness to the recipe while keeping the sugar content in check.

Balanced Flavors

The addition of cinnamon, vanilla extract, and lemon juice creates a well-balanced flavor profile with warmth, freshness, and a hint of tartness, enhancing the overall taste of the dessert.

Nutty and Crispy Texture

The crust made from walnuts and oats provides a nutty, crispy texture that pairs wonderfully with the soft, baked apples in the filling.

Ingredients needed for perfect nutty apple pie

Walnuts – of course, you can use any nuts but I highly recommend walnuts here!

Almond flakes – you could substitute for oat flour or coconut flour but remember that the structure will change.

Oats – you can substitute for regular flour but I haven’t tried this.

Dates – I don’t recommend swapping these as they are binders and sweeteners of the crust.

Flax seeds – this act as a binder too.

Plant milk – You can use any plant milk I used soy milk. Just keep in mind that soy milk contains protein levels similar to milk, which is pretty important when it comes to baking chemistry.

Apples – as I mentioned before pick nice juicy and crisp apples

Xylitol – it is here to sweeten things up but you can use regular sugar if you want.

Instructions:

Preheat the Oven: Preheat your oven to 170°C (fan oven).

Prepare the Pie Base:

Line the pie base with parchment paper, ensuring you grease the sides to prevent sticking.
In a food processor, combine the walnuts, oats, almonds, dates, plant milk, flax seeds, vanilla extract, cinnamon, and a pinch of salt. Pulse until the mixture reaches a crumbly consistency.

Create the Crust:

Take about 2/3 of the nut mixture and press it firmly into the base of your prepared pie dish. Make sure to push the sides slightly higher to create a well for the filling. Set aside the remaining 1/3 of the nut mixture.

Prepare the Filling:

Grate the apples, including the soft skin if you prefer (no need to peel).
In a mixing bowl, combine the grated apples, xylitol, cinnamon, and freshly squeezed lemon juice. Mix the ingredients thoroughly until well combined.

Assemble the Pie:

Spread the apple filling evenly over the nutty crust in your pie dish.

Top It Off:

Take the leftover 1/3 of the nut mixture and break it into tiny bits. Sprinkle these bits evenly across the top of the apple filling.
Bake the Pie:

Place the pie in the preheated oven and bake at 170°C for approximately 50 minutes, or until the top is golden brown, and the apples are tender.
Cool and Slice:

Once baked, remove the pie from the oven and allow it to cool down to room temperature.

Expert Tips for a Perfect Pie

  • Use an apple that holds up well like Granny Smith.
  • Pile the apples high, they’ll shrink a bit as they bake.
  • If you notice the topping starts to brown too early, place a small square of foil over the middle.
  • If your apples release a lot of liquid, try to drain some of it off. It will prevent the base from getting soggy.

How can you store this

Once the pie has cooled it can be stored at room temperature uncovered for up to 24 hours. After that keep it in the fridge for up to 4 days if it will last!

Can you freeze nutty apple pie?

I have not frozen the whole pie but I did freeze the dough to use later for baking.

  • food processor

Ingredients
  

base

  • cup walnuts
  • 1 cup oats
  • 1 cup almonds
  • ¾ cup dates
  • 3 tbsp plant milk I used soy
  • 5 tbsp flax seeds
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • pinch of salt

top layer

  • 5-6 medium apples
  • ½ cup xylitol
  • 2 tsp cinnamon
  • ½ lemon juiced

Instructions
 

  • Preheat the oven to 170°C. Fan oven
  • Line pie base with parchment paper and make sure to grease the sides so the base wont stick.
  • Place all the base ingredients in a food processor and blitz to get the crumb consistency.
  • Use about 2/3 of the mas and press into the base making sure to push the sides a bit higher for the filling. Set the 1/3 rd to the side.
  • Grate your apples ( my apples has soft skin so i did not peel them) .
  • Add the rest of the filling ingredients and mix well.
  • Add your apples to the base and even it out.
  • Take the leftover base mix and rip tiny bits of and spread across the top.
  • Place in the oven and bake at 170° for about 50 min.
  • Let it cool down and slice!
  • ENJOY!
