What is the egg replacement in this recipe?

If you ever thought that you can’t make pancakes without eggs I am here for you! In this recipe, I have used a nice ripe banana and flax egg that both act like a binder and add softness to the pancakes. In addition, the banana adds an extra-natural sweetener to those pancakes. The additional teaspoon of baking powder will puff them up more to make them deliciously pillowy!

whole-grain spelt flour – can be substituted with other whole-grain flour but they will be dense and might need more liquid.
chocolate protein powder – you don’t have to use protein powder. You can just add more flour.
raw cacao powder –
try to get the best quality one you can get your hands on. This gives this deliciously rich chocolate flavor!
flax seeds – this is our vegan egg that will help those pancakes be more plump
baking powder – add to the fluffiness

coconut milk – I love making mine own as it gives this delicious rich flavor but if I use a store-bought I would definitely look for the one that has only coconut in it. Without any extra preservatives or thickness.

  • Cocoa is rich in antioxidants that prevent many diseases. The substances contained in cocoa soothe, improve mood, and increase sex drive! Minerals found in cocoa: phosphorus, magnesium, chromium, zinc, potassium, sodium, calcium, and iron. Vitamins included in cocoa: A, B1, B2, B3, B6, E, K, folic acid.

Cacao beans develop flavor and texture through a fermentation process before heading for processing into either cacao or cocoa powder. To create cocoa powder, processors apply very high temperatures to the cacao beans, which produce that smooth, sweet taste that people enjoy in baked goods or hot cocoa. Cocoa powder is less bitter than cacao, but it loses some of its nutritional value during processing. Cacao beans that are destined to become cacao powder and cacao nibs aren’t roasted at these high temperatures. Instead, they’re processed at low temperatures and then milled into a powder. Cacao powder is quite bitter but retains more of the bean’s original nutritional value.

Storage

If you have any leftovers let the pancakes cool down. Place a sheet of parchment paper or wax paper between each pancake to prevent them from sticking together.
Store the pancakes in an airtight container or a zip-top plastic bag in the refrigerator for up to 3-4 days.

To reheat heat a non-stick skillet over medium heat and place the pancakes in the skillet. Cover them with the lid to prevent drying out more. Cook for 1-2 minutes on each side, or until warmed through.

Homemade coconut milk


In these easy rich chocolate vegan protein pancakes, I use quick homemade coconut milk. I simply run out of canned one but most importantly I always try to avoid canned food as much as possible due to many flavourings, sugar, stabilizers, and thickeners, e.g. guar gum, xanthan gum, and carrageenan. If you decide to buy coconut milk canned make sure the packaging states that it does not contain bisphenol. It is a substance that passes from cans or bottles to food and is considered carcinogenic.

Homemade coconut milk is pretty easy to do! You just need 2 ingredients: coconut meat and filtered water. That’s it. I have the best results using freshly sliced coconut that I buy in my local Asian grocery store. I find that it gives way more authentic and creamier milk than using shredded coconut.

Coconut milk is a good source of certain minerals. A portion of 100 g covers the daily requirement of manganese at 46 percent, copper at 13 percent, phosphorus at 10 percent, and magnesium, iron, and selenium at 9 percent. It also contains small amounts of vitamin C, niacin, folic acid, and other B vitamins.

Ingredients
  

pancakes

  • ½ cup whole-grain spelt flour
  • 2 tblsp chocolate protein powder
  • 2 tblsp raw cacao powder
  • 1 tbsp flax seeds
  • ½ tsp baking powder
  • 1 tsp maple syrup
  • 1 cup homemade coconut milk
  • 1 small ripe banana

coconut milk

  • 1 cup coconut slices
  • 1 cup warm water
  • pich of salt

chocolate sauce

  • 2 tblsp coconut milk
  • 2 tbls chocolate chips
  • pinch of salt

Instructions
 

To make milk

  • Put coconut and water in a blender and blend for few minutes till most of the coconut slices disindagrate.
    Warm water help here.
  • Use cheescloth or milk bag to strain the milk.

Pancakes

  • Put everything into a blender and blitz to a smooth batter! That simple!
  • Heat the non stick pan and add oil if using.
  • Use about 1/3 of a cup for each pancake and fry till bubbles form then flip on the other side and cook further minute or so.
  • READY! now just gobble them up! 😊✌
