Healthy, wholesome chocolate energy truffles are the perfect snack to batch prepare for the moments of sugar crush!

This is yet another recipe for those beautiful little energy snacks that are full of real whole food ingredients and I love making them fairly regularly.

This version is full of natural sweetness coming from raising and full of beautiful raw cacao but because there is a bit of sugar from raisins I practice mindful snacking if you know what I mean ( =PORTIONS lol).

Raw cacao is full of flavonoids. These nutrients have been shown to help lower blood pressure, improve blood flow to the brain and heart, and aid in preventing blood clots. The flavonoids in cacao powder may help increase insulin sensitivity, reducing your risk of diabetes.

That’s plenty of reasons to eat dark chocolate very often in my books! 😜😉

Note on the difference between cacao and cocoa powder:

cacao powder

  • Raw cacao is made from cold-pressing un-roasted cacao beans. The process keeps the living enzymes in the cacao and removes the fat (cacao butter).
  • Cocoa looks the same but it’s not. Cocoa powder is raw cacao that’s been roasted at high temperatures. Unfortunately, roasting changes the molecular structure of the cacao bean, reducing the enzyme content, and lowering the overall nutritional value. I still love adding this to some of the recipes to achieve a more chocolatey flavor.

Equipment

  • food processor

Ingredients
  

  • 200 grams hazelnuts
  • 400 grams raisins
  • 3 tbl hazelnut butter ( almond butter is ok too)
  • 2 tbl raw cacao powder
  • 2 tbl coco powder
  • pinch salt

Instructions
 

  • begin by placing the hazelnuts in the food processor and pulsing until they are nicely crushed.
  • Add the medjool dates and pulse until it’s fully mixed.
  • Add the almond butter cocoa and cacao and then mix again in the food processor. Add that pinch of salt.
  • Roll them into balls and store them in the fridge 😘
