Everybody needs a good recipe for a good and healthy snack. You know those afternoons when you feel like something sweet or something that will “pick you up “just a little? Well, I am always on a mission to look for the perfect snack that I can make at home that is healthier and way cheaper than store-bought ones.  Let me tell ya……this day’s market is full of protein balls, protein bars, flapjacks, etc. They’re usually made with dried fruit and nuts or nut butter, meaning they will give you a serious amount of good fats and energy. After all, when you’re craving a quick energy boost in the afternoon, it might make more sense to reach for an energy ball than a bar of chocolate.

Unfortunately, not all of them are so good for you. Many of those snacks are packed with loads of calories, and tons of added sugar or sweeteners, and many protein balls have added protein powder that in my opinion makes them unpleasant to eat and dry.

You don’t have to look any further. That’s where the homemade healthy energy bites come in! These little snacks for energy are portable, so they are the perfect healthy on-the-go! They will give you a definite boost in energy when needed!

Among the many flavors available out there, Vanilla, caramel, coconut ball, and Vegan Raffaello are my two absolute favorite flavors! The vanilla, caramel, and coconut ball is a perfect blend of sweet and nutty flavors, making it a tasty and satisfying snack. On the other hand, Vegan Raffaello offers a unique and indulgent flavor with its chocolaty and nutty filling. Both options provide a convenient and healthy source of energy that can help fuel your workouts or get you through a busy day.

Ingredients you will need:

Oats

I use old-fashioned oats or rolled oats in this recipe. I would not recommend steel-cut oats or instant oats. If you want to keep these bites gluten-free make sure to use certified gluten-free oats!

Cashews

They add a mild, sweet, buttery taste- I think they’re everyone’s favorite nut! You can replace cashews with any other nut, seed, or dried coconut but obviously, it will alter the flavor of the finished product.

Hazelnuts

These nuts add a vibrant, sweet, and proper nutty flavor. When toasted they always remind me of Nutella (hence the name of one of the energy truffles 😉). You can replace hazelnuts with any other nut, seed, or dried coconut but it will change the flavor of the finished product.

Dates

Medjool dates that is…. Oh, guys… do I love dates? ….. I ABSOLUTELY DO! I get 5 kg of them every 2 months 😊 They are nature’s toffees if you ask me! They are soft, gooey, and just the right amount of sweet. Interesting fact:  They are high in fructose, but have a low glycaemic index. (foods with a low glycaemic index cause less increase in blood sugar levels).

I’d recommend using Medjool dates because they provide an amazing moist caramel-y flavor and sweetness, but any date will do.

Cocoa powder

I use and recommend raw cocoa for its health benefits. Cocoa powder provides more nutrition than cocoa powder (this cocoa is processed at a much higher temperature). Cocoa powder is also an excellent source of iron, magnesium, and potassium. All of the above are the perfect reason to eat chocolate😊.

Tahini

This is another ingredient that I absolutely love! While sesame may be an acquired taste for some, I find tahini to be so much more neutral than other nut or seed butter. It adds creaminess to many of my vegan recipes, hummus, and salad dressings included

These energy Balls are a combination of dried fruit, nut butter, honey tahini, and other simple whole ingredients that offer a densely nutritious snack in a little ball. They taste like dessert, but are actually good for you!

How do I store them?

Store leftover energy balls in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.

The first recipe of vanilla and coconut balls is delightful! Oat flour and cashews give that nice chewy texture and, dates add a gentle touch of sweetness, while tahini with vanilla extract gives that familiar flavor you can’t resist. These easy energy bites taste like cookie dough

The second recipe is a really lovely chocolate flavor that reminds me of Nutella 🙂 It’s chocolatey simplicity at its best. Hazelnuts provide the nutty crunch, raw cacao, honey, and tahini bring the chocolatey goodness, and a pinch of salt brings out that chocolate flavor a little more! Equipment

  • food processor

Ingredients
  

Vanilla and coconut

  • 1 cup oat flour
  • 1 cup cashews
  • ½ cup dates
  • 1 tblsp coconut sugar
  • 4 tbsp. tahini
  • tsp himalayan salt
  • ½ tsp vanila extract

Chocolate Rafaello

  • 2 cups hazelnuts
  • 1 cup dates
  • ½ cup raw cacao
  • 6 tblsp honey
  • 2 tbls tahini
  • pinch of salt

Instructions
 

Vanilla and coconut

  • Grind your cashews until they resemble crumbs in a high speed food processor.
  • Add your dates and blitz them togheter till broken into tiny pieces. If your dates are hard sofen then for 15 minutes in a hot water than drain before you add them to the foood processor.
  • Add the rest of the ingredients.
  • Grind all the ingredients into a thick, moist dough. This may take several minutes. If it's still too crumbly, add some more dates or a tablespoon of water. They should stick together when you sqeesh them btween your fingers.
  • Roll into equal size balls ( they were around 30g eah).
  • Put them in a container and store them in the fridge.

Chocolate Rafaello

  • Roast your hazelnuts on the dry frying pan till you can actually smell them toasting. You can also rost them for 10 min in the oven. Just watch them so you don't burn them as they will taste very bitter
  • Add toasted nuts to food processor and process them till theyresemble crumbs.
  • Add the rest of the ingredients and process them till they dough comes together.If the dough feels dry and does not comes together add another drop of tahini till the ingredients bine into a sticky mass
  • Roll them into balls and if you want you can additionally coatthem in coco powder.
  • Put them in a container and store them in the fridge.
  • ENJOY THEM!

    These look great, I have come to the realization that it would be too difficult for me to become completely vegan! Dates, oats, and cashews — they are in my way! LOL

    My husband would enjoy these though. He loves all three! I will show them to him!
