This Best Vegan milk recipe is my absolute favorite recipe! It is full of minerals from mineral water and electrolytes from coconut water, not to forget the healthy fats!

Plant-based milk from the store can cost a fortune, and especially if it is organic. And if you are like me and you are using it on a daily basis it does add up! Even if you are a happy owner of milk that was on sale it is very difficult to find a healthy version of plant-based milk without unnecessary additives. Besides the plant matter (example: almond, pea, soy, rice, oat) and water most include a list of ingredients that might as well be in a foreign language. Some of them:

3 of The Most Common Nut Milk Additives I try to AVOID

  • Emulsifiers- Xanthan and Guar Gum – These 2 additives have been linked to digestive problems and even weight gain. You can read up a little about it Good Kind Foods website.
  • Genetically Modified Oils – Though these products are very low in fat for the most part, the oil that is used in them still should be taken into consideration. Canola, safflower and sunflower oil are the most common oils used in non-dairy milks. They contain very little risks, but are some of the top oils known to be genetically modified. ( that’s a whole different subject)
  • MSG– You probably wont see it listed in your ingredients list but it can be hidden under : “natural flavors” and “natural colors”. You can read more very interesting things about it on One Green Planet website.

All that being said there and contrary to belief, making homemade plant milk is not hard or time-consuming. The first time it feels tough, but then it becomes a habit. It is important to remember a few important issues, such as soaking, so that the preparation of a milk preparation does not take more than a dozen or so minutes a day. Soaked seeds are easier to blend in a blender and soaking reduces phytic acids and improves the absorption of important nutrients and minerals.

WHAT ARE THE BENEFITS OF VEGAN MILK?

  • It’s rich in vitamins and minerals
  • Most of them are low in fat
  • They do not contain cholesterol
  • They have a healthy combination of mono- and polyunsaturated fats
  • Perfect for people with a slow digestive system

Below I am giving you 3 basic milk recipes I use at home and THE ONE badass combination of ingredients that will make the best thick, creamy, and luscious plant-based milk you ever tasted!

3 Basic plant-based milks:

Coconut milk

Ingredients:

  • 200 g of coconut shreds (soaked overnight),
  • 1.2 liters of water.

Preparation:

After overnight soaking, do not pour the water from the chips, but pour the whole thing into a pot and heat it to about 60 degrees C. ( it helps with blending). Then blend the mass with a blender until smooth. Alternatively, if you are short on time, cover the shreds with warm water. Pour all through folded gauze and store in a glass bottle in the refrigerator. Shake the bottle a few times before use.

Note: Be aware of warm water in a blender. It can build up the pressure and it might just burst open! Check your blender instructions!

Almond milk

Ingredients:

  • 1 cup of almonds skin on
  • 1 litre of water
  • date or two, alternatively add maple syrup

Preparation:

Blend everything and then pour it through the gauze. The leftover pulp is perfect as a filling for pancakes, an addition to cakes, cookies, and vegan pâtés. It can also be used on bread. Any spread is delicious on this easy homemade rustic bread! ( recipes for spreads coming soon!)

Soy milk

Ingredients:

  • 1 cup of non-GM soybeans (soaked overnight in 3 cups of water),
  • 6 glasses of water.

Preparation:

Blend the soybeans swollen overnight with water. Add 3 remaining glasses of water to the mixture. Drain through the gauze or nut milk bag. Cook it all for 30 minutes on low gas, being careful not to overcook it. Keep skimming off the foam that will be forming on top. Okara (mixed leftover soybeans pulp) can be used as a stuffing for cabbage rolls, croquettes, for baking bread, or for making soy chops.

Now that you have basic milk recipes under your belt let’s get to the beast and best vegan milk that I absolutely love!

What you will need to make this Best Vegan Milk:

almonds – Rich in vitamin E add to the creaminess of this milk

macadamia – Don’t omit those! They add a beautiful richness to this recipe! Contain primarily monounsaturated fat as well as Manganese, Thiamine, Copper, Magnesium, Iron, Vitamin B6

cashews – They also add to the creamy consistency of this plant milk. Rich in protein, healthy fats, and antioxidants such as polyphenols.

mineral water- The particular one I used contains Magnesium – Mg2+, Calcium – Ca2+, Bicarbonates – HCO3-, Potassium – K+, Iron – Fe

coconut water – Another ingredient that contains a variety of electrolytes, including sodium, potassium, calcium, and magnesium. Adds to the beautiful sweetness of the milk.

hulled hemp seeds – These small seeds are rich in protein, fiber, and healthful fatty acids, including omega-3s and omega-6s.

salt – just a pinch. Enhances the flavor!

Equipment

  • high speed blender
  • nut milk bag or cheesecloth

Ingredients
  

  • 1 cup almond nuts
  • 1 cup cashew nuts
  • 1 cup macadamia nuts
  • 6 cups coconut water
  • 4 cups mineral water
  • 4 tbls hulled hemp seeds

Instructions
 

  • Soak all your nuts over night. Don't soak the hemp seeds
  • Next morning rinse your nuts and add them to your blender. with hemp seeds
  • Add some of the water ( depended on the size if your container) and blend till smooth.
  • You can strain that through the nut milk bag or cheesecloth and than add the rest of your water.
  • Pour into a big glass jar or 2 and enjoy!
