Key ingredients you need to make this Vegan brioche:
bread flour -I would recommend it as it works best but I used this with regular flour before and still turns out good. The texture of the bread will be less brioche-like as bread flour has more protein which contributes to the bread-like texture.
yeast – I used fresh yeast as I have access to it but you can use the yeast chart below for reference.
oil – in this recipe, I use rapeseed oil as it is neutral in flavor. You can use safflower oil or even coconut oil if you don’t mind the coconut flavor.
pears – If you don’t have pears you can always swap for apples! Both work well in this recipe and It will be equally delicious!
date paste – You can make a paste by blending dates with water in a high-speed blender.
spices – when you can’t find one in a shop you can make your own. Minimalist Baker has a great recipe you can use.
How to make it:
1. Make the Dough: a. In a container, combine 175 ml of lukewarm water, sugar, and instant yeast. Stir and let it stand for 5 minutes until foamy. b. In a mixing bowl, add bread flour and salt. Mix well, then incorporate the activated yeast mixture. c. Mix until a shaggy dough forms. If using a stand mixer or food processor, you can continue mixing in that. d. Turn the dough onto a work surface, and knead for 5-8 minutes until smooth. e. Shape the dough into a ball, cover it, and let it proof in a warm area for 60 minutes.
2. Prepare the Filling: a. Chop pears into small cubes and cook in a pan with water, covered, until very soft. b. Add flour, and mix to eliminate lumps. c. Add sugar and vegan butter, mix, and cook for an additional 4-5 minutes until slightly caramelized. Set aside.
3. Combine: a. After proofing, the dough should have doubled in size. b. Generously flour a clean work surface, the dough, and a rolling pin. c. Roll the dough to approximately 3-5 millimeters thickness, ensuring it doesn’t stick. d. Spread the prepared filling evenly over the dough. e. Roll the dough into a long log and cut it in half. f. Using a sharp knife, cut each half lengthwise, exposing the layers inside. g. Twist the two halves together, placing one on top of the other with the cut side facing up. h. Place the twisted dough into a parchment-lined bread pan or baking tray and proof for an additional 30-40 minutes.
4. Bake: a. Preheat the oven to 180°C. b. Brush or spray the bread with plant-based milk. c. Bake in the oven for 25-30 minutes.5. Finish: a. Amazing Easy Vegan Brioche with pears and chai spices!
Ingredients
dough
- 300 gram bread flour
- 5 gram instant yeast
- 7 gram salt
- 175 ml water
- 15 gram rapeseed oil
filling
- 2 medium pears
- 2 tblsp coconut sugar
- 4 tblsp water
- 1 tblsp vegan butter
- 1 tblsp flour
Instructions
make the dough
- ACTIVATE THE YEAS.TIn a container, add 175 ml of luke warm water and the sugar and active yeast and stir. Let stand for 5 minutes or until it becomes foamy.
- In a mixing bowl, add the bread flour, and salt. Mix well. Incorporate the activated yeast oil.
- Mix until a shaggy dough forms(If you have a stand mixer or food processor, you can use it from this point on)Turn the dough out on your work surface and start kneading for 5-8 minutes or until the dough becomes smooth.
- Shape the dough into a ball, cover and let proof in a warm area for 60 minutes.
prepare the filling
- Chop your pears into small cubes and add to the pan with the water. Cover and cook on the medium heat till the pears are very soft.
- Add the flour and mix well so there is no lumps.
- Add the sugar and butter and mix through.
- Cook for another 4-5 minutes on low heat till sligtly caramelized. Set aside.

- After proofing, though dough should have at least doubled in size.
- Generously flour a clean work surface, your dough and your rolling pin.Roll the dough to roughly 3-5 millimeters thick, making sure that it’s not sticking to your work surface.
- Take the filling of your choice and spread it evenly to cover the dough
- Roll the dough up into a long dough log.Now divide the log in half.
- .Using a sharp knife or blade, cut each of the halves length wise.
- Cut deep, but not all the way through the dough to expose the layers on the inside. Now plat the 2 halves together trying to keep the cut side facing up. (Put one on top of another, run under and over again ).
- Place into a bread pan lined with parchment paper or baking tray and proof again for 30-40 minutes.
- Preheat your oven to 180°C. Brush or spray your bread with a bit of plant-based milk.
- Place the bread into the oven for 25-30 minutes.
- As soon as the bread is done baking, remove it and immediately brush with some vegan butter.This will give the bread a lovely shine! Let the bread cool down before serving.
