This is hands down the best oil-free hummus you will try! It is creamy and zesty with an umami flavor from coconut aminos! Homemade hummus is a simple, inexpensive, and instant idea for a quick, easy, and versatile snack!

This recipe for oil-free hummus is my staple recipe. It is creamy, zesty, and full of umami flavor from coconut aminos. It is a condiment I ALWAYS have in my fridge! Although today houmous is eaten all over the world. Undoubtedly, it gained popularity along with the growing interest in the vegan diet, and Egypt and the countries of the eastern Mediterranean are the places where hummus originated.

This spread is also an excellent protein source for people like myself that don’t consume animal protein. This wonderful paste is rich in vegetable fats and proteins, ideal for dipping party snacks or spreading on sandwiches. Your humble hummus!

Hummus Varieties

The possibilities of adding extra flavor to your oil-free hummus is only limited by your imagination..

You can and it is worth experimenting with a ratio of the ingredients too. It can create a different, new taste and color each time. By serving several versions on one plate, you can get an additional decorative effect. Each guest or household member will be able to compose their own sets of favorite flavors.

This is the base of nearly all hummus recipes. Chickpeas, also known as garbanzo beans, are a type of legume that is full of protein, fiber, and complex carbohydrates. They are nutrient-dense, meaning they have lots of useful nutrients but are relatively low in calories. 

Why is oil-free hummus good for you?

  • great source of plant-based protein, providing 7.9 grams per serving.
  • it is a great source of dietary fiber, which can improve digestive health.

If you make homemade hummus with real ingredients it is actually very healthy as it doesn’t contain any additives, preservatives, or flavoring that shop-bought ones do.

This oil-free hummus recipe contains a few healthy ingredients:

chickpeas – I recommend using dry chickpeas that are soaked overnight. I find it gives the best texture in comparison to canned. However, If you don’t have dry chickpeas use canned ones. The rest of the ingredients will transform them into deliciousness 😉.

coconut aminos – this is a major flavor booster! if you don’t have coconut aminos use soy sauce or tamari. I would just reduce the amount as both are stronger in flavor. You don’t want soy sauce over take your hummus! 😁

apple cider vinegar – helps with acidity and fluffiness

lemon juice – is an acidity booster. I like my hummus zesty!

tahini– tahini is made from ground sesame seeds. They are also great sources of important amino acids, which allows the creation of complete protein when combined with chickpeas! They also add nice creaminess.

garlic pressed – I tend to add just 2 cloves. It all depends on the size of the clove. I don’t like overly garlicky hummus. Pro Tip – remove the middle stem from the garlic, that will reduce the bitterness. YOU ARE WELCOME 😊

cold water – the best water is icy water! I use ice cubes here.

You can prepare this oil-free hummus for the whole week! This way you will always have a delicious and healthy spread or dip on hand! By making your own hummus you will save a bit of money as all the ingredients are easily available everywhere!

You can help hummus stay fresh longer by storing it in your refrigerator after every use. Hummus should be stored in a tightly-closed container to keep out moisture and other contaminants.

Tips to make the best oil-free hummus

1) Mushy chickpeas

Make sure when you cook your chickpeas from scratch that they are really well done. When chickpeas are cooked to the right soft consistency they are very creamy which makes them ideal to make smooth hummus. If you have to buy canned I would boil them for a few minutes to make sure they are nice and soft.

2) Great tahini

All tahini is not created equally. I learned that the best tahini comes from Ethiopia. Store-bought tahini really varies widely in flavor, with some of them so bad that they’ve ruined my hummus. I have two that I use the most you can buy one on Amazon and the other on Koro website.

3) Ice-cold water

It seems to help make the hummus light and fluffy and lightens the color of the tahini to that characteristic pale ivory color.

4) Fresh-squeezed lemon juice

Give yourself a favor and do not use store-bought lemon juice! Fresh lemons where is at!

5) Garlic, mellowed in lemon juice

If you mince the garlic in the food processor or blender with the lemon juice and let it rest for a few minutes, the garlic will lose its harsh, raw bite and mellow out. This way, your lemon juice is infused with delicious, mellow garlic flavor.

Hummus Garnishes

As this hummus recipe doesn’t have oil as an ingredient I like to add a tiny drizzle of oil on top. However here are more ideas for your garnishes:

  • smoked paprika
  • sesame seed
  • chopped parsley
  • any hot sauce gently drizzled

Oil – free hummus

Equipment

  • food processor

Ingredients
  

  • cup dry chickpeas
  • ½ cup coconut aminos
  • 30 ml apple cider vinegar
  • 30 ml lemon juice
  • ½ cup tahini
  • 2-4 cloves garlic pressed
  • ½ cup cold water ( ice cubes)
  • big pinch salt
  • big pinch pepper

Instructions
 

  • Soak your beans overnight or for 8 hours.  Drain your soaked beans and add to a pot along with 5 cups of water.  Cook without a lid for 45 minutes or until mushy all the way through (i use a pressure cooker and it takes roughly 10 minutes).
  • Drain your cooked beans and let cool for 10 minutes.  
  • Crush or chop your garlic.
  • Marinate the garlic in lemon juice for 10 minutes. The acidity of the lemon juice prevents the garlic from becoming too harsh. This way, your lemon juice is infused with delicious, mellow garlic flavor.
  • Add all your ingredients to a high speed blender or a food processor. Blend until well combined, you might need to add more water in order for it to blend to the right consistency.  I like mine pretty thick and creamy but it can get tricky to blend that much, so add more ice cubes ifyou need,  Its really just up to you!
  • Eat it right away or store in in a airtight container in the fridge.
