The Fluffiest Vegan Protein Pancakes you will ever have! Made without bananas, refined sugar, or flour!
There are many breakfasts to indulge in, but for me, it has to be pancakes!
I promise you these vegan protein pancakes are sooo good. They are fluffy, scrumptious, and guarantee to satisfy anytime you need a pancake fix! You only need a few basic ingredients to make these and they take just minutes to prepare.
I usually only eat pancakes on weekends or days off work as usually pancakes take a little time to make but these are so quick and easy they could work as a weekday breakfast for the family. Top them with loads of fruit or some of the topping ideas below. I added protein powder to this recipe to up the protein content so I will be feeling full for a little bit longer 😉.
Ingredients you need to make vegan protein pancakes :
- oats
- plant milk – any milk will do
- flax seeds – you need to grind them as they will be a binder for our batter
- scoop plant based protein – you can omit these but vanilla plant based protein can be an adittional flavour booster! and of course it will bump up the protein content.
- 1 tsp apple cider viniger – it will help them with the fluffines.
- pinch of salt – brings out the flavor
- ½ cup apple puree – it is for layering between the pancakes – if you want to omit that you can always pick one from the list below!
Pancake topping ideas:
- peanut butter, almond butter, tahini, or any nut butter
- dates soaked in hot water then blended to make caramel sauce
- nut butter caramel sauce – blend your fave nut butter or tahini with dates
- fresh fruit
- chocolate – mix maple syrup, coconut oil, and cacao powder
- pure maple syrup
And if you like sweet potatoes as much as I do you can try another of my all-time favorites…. sweet potato pancakes! They are unbelievably sweet and delicious! Let’s face it what could be better than a pancake for breakfast!
Vegan protein pancakes
Equipment
- blender
Ingredients
- ¾ cup rolled oats
- 1 cup plant milk ( any milk)
- 1 tbl flax seeds ( grind them)
- 1 scoop plant based protein
- 1 tsp apple cider viniger
- pinch of salt
- ½ cup apple puree ( for layering)
Instructions
- If you don't have apple puree simply chop one apple to stew it in a pan with 2 tablespoons of water till apple are soft. Blend in a blender and set aside
- Put the rest of the ingredients in a blender and blend till smooth. Set aside for few minutes for flax seeds to absorb the liquid.
- Heat the non stick frying pan and fry about ¼ cup of batter on one side till u see bubbles than flip on the other site and cook for a minute or 2
- Layer your pancakes with apple puree in between. I drizzled mine with tahini YUM YUM
