Celeriac root coleslaw

Equipment

  • food processor
  • grater

Ingredients

  • 1 medium celeriac around 300 g
  • 1 medium apple
  • 3-4 tblsp vegan mayonaise
  • 4 tblsp vegan yogurt
  • salt & pepper
  • 2 tblsp chopped walnuts

Instructions

  • Wash the celeriac and apple and grate them in a food processor or use a veggie grater.
  • Add lemon juice first as it will stop the celeriac and apple turn brown!
  • Add the rest of the ingredients and mix well.
  • Leave it in a fridge for at least 30 min before serving.
  • ENJOY!
