Amazing Easy Vegan Brioche with pears and chai spices!

Ingredients

dough

  • 300 gram bread flour
  • 5 gram instant yeast
  • 7 gram salt
  • 175 ml water
  • 15 gram rapeseed oil

filling

  • 2 medium pears
  • 2 tblsp coconut sugar
  • 4 tblsp water
  • 1 tblsp vegan butter
  • 1 tblsp flour

Instructions

make the dough

  • ACTIVATE THE YEAS.TIn a container, add 175 ml of luke warm water and the sugar and active yeast and stir. Let stand for 5 minutes or until it becomes foamy.
  • In a mixing bowl, add the bread flour, and salt. Mix well. Incorporate the activated yeast oil.
  • Mix until a shaggy dough forms(If you have a stand mixer or food processor, you can use it from this point on)Turn the dough out on your work surface and start kneading for 5-8 minutes or until the dough becomes smooth.
  • Shape the dough into a ball, cover and let proof in a warm area for 60 minutes.

prepare the filling

  • Chop your pears into small cubes and add to the pan with the water. Cover and cook on the medium heat till the pears are very soft.
  • Add the flour and mix well so there is no lumps.
  • Add the sugar and butter and mix through.
  • Cook for another 4-5 minutes on low heat till sligtly caramelized. Set aside.

  • After proofing, though dough should have at least doubled in size.
  • Generously flour a clean work surface, your dough and your rolling pin.Roll the dough to roughly 3-5 millimeters thick, making sure that it’s not sticking to your work surface.
  • Take the filling of your choice and spread it evenly to cover the dough
  • Roll the dough up into a long dough log.Now divide the log in half.
  • .Using a sharp knife or blade, cut each of the halves length wise.
  • Cut deep, but not all the way through the dough to expose the layers on the inside. Now plat the 2 halves together trying to keep the cut side facing up. (Put one on top of another, run under and over again ).
  • Place into a bread pan lined with parchment paper or baking tray and proof again for 30-40 minutes.
  • Preheat your oven to 180°C. Brush or spray your bread with a bit of plant-based milk.
  • Place the bread into the oven for 25-30 minutes.
  • As soon as the bread is done baking, remove it and immediately brush with some vegan butter.This will give the bread a lovely shine! Let the bread cool down before serving.

BREAD (2 LOAVES)
600g Bread Flour
10g Instant Yeast
5g Nutritional Yeast (optional)
15g Salt
350ml Water
30g of Oil (any of your choice. flavored oils work great.
